Ragi ladoo

Millet or Ragi as commonly known is regularly used in the South kitchens. It’s in fact the staple diet in many villages across South India! which is quite popular there.  Ragi is also a rich source of fiber and helps lower cholesterol level. – Ragi is best food for weight control, diabetes and a cooling the body.

Ragi Ladoo

INGREDIENTS:

Ragi flour 1 cup
Flaxseeds 1/2 cup
Black sesame seeds 1/4 cup
Roasted Peanuts 1/4 cup
Grated Jaggery 1 cup
Salt pinch
Cardamom Powder 1 tsp
Ghee 2 – 3 tbsp

Method:

  1. Heat a pan and dry roast Ragi flour until it is aromatic.
  2. Dry roast Flaxseed/linseed, until it starts popping.
  3. Also dry roast black sesame seeds until it starts popping.
  4. Dry roast each ingredients separately and transfer it to a bowl.
  5. Then add all the ingredients to the mixie jar, also add roasted peanuts, cardamom powder, a pinch of salt and finally grated jaggery.
  6. Grind it all together, to blend all the ingredients. Check the sweetness and adjust as per your wish.
  7. Add ghee to it and whisk once or twice until it is well combined.
  8. Transfer the mixture to a big plate and make lemon sized ball.
  9. Ragi ladoo is ready to serve.
  10. Healthy and tasty Ragi ladoo.

Aval Karkkandu Payasam/அவல் கற்கண்டு பாயசம்

Very tasty Aval Karkkandu Payasam

Herbs And Pulses

Ingredients

Aval (medium) ½ Cup
Rock Sugar (un polished) ½ Cup
Milk 1½ Cup
Water ½ Cup
Cardamom 1 no.
Pacha Karpuram a pinch
Cashew Nuts 5 nos.
Ghee 1 tsp

Method

1. Heat sauce pan with 1 tsp ghee.
2. Keep the flame low to medium.
3. Fry the cashew nuts in the ghee until it is roasted and golden colour.
4. Add Aval/flake rice and continue frying until it changes to light brown colour.
5. Now add ½ cup water and ½ cup milk.
6. Let it boil and cook the Aval / Flake rice until it is soft.
7. Now add the rock sugar / Karkkandu to the sauce pan. Let it dissolve and incorporate with the Aval / Flake rice.
8. Once the Aval is cooked, add another cup of milk, cardamom and pacha karpuram.
9. Let the milk boil and all the flavours incorporate.

KAJU KATLI (with Jaggery)

Kaju Katli with no Sugar.

Kaju Katli is a very popular sweet for any occasion. It is made with grounded Cashew nuts.
Here is the recipe for your favourite Kaju Katli using Jaggery

Ingredients

Cashew Nut1 Cup (Powdered)
Jaggery½ Cup
Cardamom Powder½ tsp
Water3 tbsp
Ghee1 tsp + greasing

Method

1. Powder the cashew nut coarsely.
2. Grate the jaggery and boil with little water.
3. Choose Jaggery in light colour, so you will get the sweet in usual Kaju Katli Colour and not in brown colour.
4. Once the jaggery dissolves, filter the syrup and get rid of dirt in jaggery.
5. Transfer the filtered jaggery syrup to a pan and let it boil.
6. Boil the syrup upto 1 string consistency. If you find it difficult, just boil for 2 min.
7. add the cashew nut powder, cardamom powder and ghee to the syrup.
8. Mix and cook until it separates from the pan.
9. Grease a tray with little ghee.
10. Transfer the Cashew nut mixture to that tray to let it cool down.
11. Roll the cashew nut mixture flat.
12. Before it cools down completely, slice the Kaju katli with knife.
13. Later separate it and store it in a box and enjoy.
14. Tasty and healthy Kaju Katli is ready.

Rock Sugar (un polished)½ Cup

Method

1. Heat sauce pan with 1 tsp ghee.

11. Enjoy the tasty and healthy Aval Payasam/Flake rice Payasam.

BADAM/ALMOND HALWA

Badam/Almond halwa is an Indian sweet. Almonds can be eaten as raw or toasted as a snack or add them to sweet or savory dishes. Almonds contain vitamins, minerals, protein, and fiber. So they offer a number of health benefits. Just a handful of almonds — approximately 1 ounce — contains one-eighth of a person’s daily protein needs.
Badam Halwa is my children’s favorite too..

There are different ways to make Badam halwa. This is one of the simplest method to make Badam halwa
without using artificial coloring.

Ingredients

Badam/Almond                                                      1 Cup
Sugar 1 Cup
Milk1 Cup
Ghee4 tbsp
Turmeric powder1/4 tsp
Salta pinch

Method

1. Soak Almond (Badam) overnight or soak in hot water for an hour and peel the skin, then rinse the Badam once.

2. Blend the Badam/Almond coarsely with milk. keep it in sand like texture.

3. Keep the mixture in pouring consistency, helps prevent the formation of lumps while cooking.
4. Heat a pan with 3 tbsp ghee, add a pinch of turmeric powder (avoid adding food colour) and pour the Almond mixture to the pan.
5. Cook the Badam/Almond mixture for 5 – 7 mins, keep stirring to avoid the mixture from sticking to the pan.

6. Once the Badam/Almond is cooked, add sugar to it slowly and continue stirring.
7. Add 2 tbsp ghee, a pinch of salt and stir until mixture is cooked well and ghee separates.
8. Silky and tasty Badam halwa is ready.

2. Semolina improves kidney function.
3. Semolina is a good source of several B-Complex vitamins [thiamine, folate] and Vitamin E, which help to support your metabolism and in building the immune system of the body.
4. It is rich in minerals, such as phosphorus, zinc and magnesium which help strengthen the bones and improves the nervous system.
5. It is rich in iron.

Ingredients

Rava 1 cup
Sugar 1 to 1¼ cup
Maida ¼ to ½ cup
Sesame seed(white) 1tsp
Salt 1 pinch
Cardamom powder ½ tsp
Oilto fry

Method

Rinse and soak Rava with very little water at least for ½ an hour, so that Rava will absorb all the water.

Add 1 cup sugar and ¼ cup water to another bowl.

Rava Ladoo

Rava Ladoo is a traditional Indian sweet

There are different ways to make Rava ladoo. This is my way of making.
Rava/Sooji/Semolina Ladoo is full of nutrients.

Ingredients

Rava / Semolina / Sooji 2 cups
Freshly grated coconut                   2 cups
Sugar                                                   1½ cups
Salt                                                     a pinch (not more than a pinch)
Cardamom  powder                       1 tsp
Ghee                                                  4 tbsp
Milk                                                      2 tbsp
Cashew nuts                                       2 tbsp(broken)

1. Preparation Time 10mins
2. Cooking Time 10mins
3. Serving ~30 ladoos

Method

1. Take a wide pan(preferrably non-stick pan).
2. Keep the flame low to medium.
3. Heat ghee and put broken cashew nuts, roast it for few seconds. Don’t let the cashew nuts change colour.
4. Now add freshly grated coconut, no need to fry for long, just saute for a minute.
5. And then add Rava, here I am using roasted rava, if you are using regular rava fry it for a longer time, until the aroma comes.
6. Add salt and cardamom powder to the mixture and mix well until it combines evenly.
7. Reduce the flame to low and add sugar.
8. Mix everything until it combines well.
9. Put off the flame and finally add the milk to the mixture and mix well.
10. Transfer the Rava Ladoo mixture to another plate and let it cool down a little.
11. Before it cools down completely, make the mixture into small small ladoos.
12. Take a small portion from the mixture and squeeze it with your palm and make balls, called ladoos.
13. Enjoy this delicious and mouth-watering Rava ladoos

Maida                                        ¼ to ½ cup
Sesame seed(white)              1tsp

Method

Rinse and soak Rava with very little water at least for ½ an hour, so that Rava will absorb all the water.

Add 1 cup sugar and ¼ cup water to another bowl.

Heat it and let the sugar dissolve and boil for few seconds. Keep this Sugar Syrup aside.

1.Transfer the soaked rava to another bowl.
2.Add the Sugar syrup and mix well.
3.Add Maida, Salt and Cardamom powder.
4.Mix well, batter should be thick like Idly batter. If it is thin, add another ¼ cup of Maida to the batter and make sure the batter is thick.
5.Add the white sesame seeds to the mixture.
6.Heat oil in a Kadai, once the oil is hot use a hollow spoon to scoop and pour the batter into the oil.
7.Wait for a while the batter will rise on top.
8.Now flip and fry the Doduttu.
9.Remove from the oil and put it on Kitchen tissue to absorb oil.

This is a very delicious sweet, children will love it.
